Ginger ale muffins - cupcakes


Ok, first of all we should apologize for the photo. It wasn't supposed to be the final photo, but some technical issues left us with it, so bear with us on this one, please. 
The whole idea in these muffins (or cupcakes, if you choose to use the frosting) is that I haven't seen around any good recipe for ginger muffins made with ginger ale (a drink we both love). That needed to be changed... so here it is. :)




Ingredients (for 12):
  • 200 g flour
  • 1 and 1/2 teaspoon ground ginger
  • 1 teaspoon baking powder
  • pinch of salt
  • 3 eggs
  • 100 g butter
  • 150 ml ginger ale
  • 250 g sugar
  • 50 g candied ginger
Frosting (optional):
  • equal amounts of cream cheese and powder sugar (I hate butter-cream frosting, I find them unnecessarily fatty and completely tasteless)
  • pinch of ground ginger (about 1 teaspoon for 1 brick of cream cheese)
  • chopped candied ginger to decorate


Mix the flour, baking powder and salt in a bowl. Add the ginger (I used the special ginger we bought from France) - and please ignore my chipped nailpolish :D

Next, preheat oven to 180 degrees C. Get the candied ginger:

Cut the pieces into small bits. Next, melt the butter over low heat:

When it's melted remove from the heat and stir in the sugar. Add the eggs:

Mix everything well, than stir in the dry ingredients and the ginger ale. Pour the batter (it will be very liquid) into a paper-lined muffin tin and put it in the oven:

Bake for 25 minutes. They're done. Have them like this or also prepare a frosting (by mixing the ingredients and piping them on top), your choice. Anyway, dig in! :)
