Thyme and lemon spicy olive oil cookies


If you like the combination of olive oil, thyme, lemon and a little dash of freshly ground pepper in pasta you'll sure like it in these cookies as well. They're super tangy and spicy and strongly flavored... like really strong and not for the faint of heart :D. 
While I absolutely love them - oh and they're quite healthy too - their flavor is so strong you really can't have more than a few at a time unless you combine them with milk or tea, combination which they seem destined for once you try it.
Make sure you use the best lemon and the freshest thyme for them and they'll take you straight to wow omg :) - but go easy on the pepper if you're not keen on it in general.

Ingredients (makes about 2 batches of cookies):

  • 200 g sugar
  • 250 g flour
  • 1 teaspoon baking soda
  • 1 teaspoon freshly ground pepper
  • 1 tablespoon fresh thyme leaves
  • 125 ml olive oil
  • 1 tablespoon milk
  • zest and juice from one lemon


In a bowl, mix the sugar, flour, baking powder and pepper.

Also pick the leaves from the fresh thyme sprigs until you gather the tablespoon of required leaves and add them too to the bowl:

In a glass mix the milk, lemon juice and zest and olive oil:

Pour the liquid ingredients into the dry ones and mix with your hand for about 2 minutes until everything is blended in:

Preheat oven to 18 degrees C, then line a baking tray with baking paper and form 1 teaspoon of batter into a little ball. Place it on the baking paper and repeat, placing the next balls about 6-7 cm apart from each other:

Bake for 13-15 minutes until golden brown around the edges. Take out and allow to cool before trying to take them off the baking sheet because while they're hot they're still soft but will get crispy when they cool off:

Repeat with the remaining dough until you finish it. Arrange on a pretty platter (or platters, or cake stand-up.. etc :D) and dig in! :)
